Every regular party host has their go-to dip, and you're about to make this creamy corn jalapeo dip with bacon dish yours.
The perfect velvety texture is created by a variety of cheeses and sour cream, and the flavour is complemented with bacon, jalapenos, and Good & Gather Sweet Whole Kernel Corn.
1 tbsp. extra-virgin olive oil, 4 slices bacon, cooked and chopped, 1 tbsp. fat reserved, 1 yellow onion, chopped, 2 jalapeños, finely chopped, plus more sliced for serving, 2 garlic cloves, minced, 2 tbsp. adobo seasoning
1 tbsp. ground cumin, 2 cans Good & Gather Sweet Whole Kernel Corn, drained and rinsed, 1/3 c. chopped fresh cilantro, 6 oz. cream cheese, softened and cut into cubes, 1/2 c. sour cream, 1/2 c. Mexican shredded cheese blend
Oil and the saved bacon fat should be heated in a 10" skillet over medium-high heat. For about 5 minutes, stir-fry the chopped onion, garlic, and jalapenos until the onion is tender and faintly yellow.
Add Good & Gather Sweet Corn Kernels and cilantro, then whisk in the adobo spice and cumin. Continue cooking, turning periodically, for an additional 5 to 6 minutes, or until the corn is brilliant yellow and thoroughly cooked.
Add the cream cheese and sour cream and mix well. Once the heat is off, whisk in the cheese.
Add slices of jalapeo, scallions, and bacon, chopped. Serve alongside chips.
